    Instructions

    1. Cook the quinoa (10 min): Rinse the quinoa under cold water. Cook in 160 ml water with a pinch of salt. Bring to a boil, reduce heat to low, and simmer for 10 minutes with the lid on. Let it sit for 2 minutes, then fluff with a fork.
    2. Make the dressing (3 min): Blend the avocado, lemon juice, olive oil, garlic, salt, and pepper with 2–3 tablespoons of water until creamy. No blender? Mash the avocado with a fork and mix everything well.
    3. Prepare the vegetables (5 min): Halve the tomatoes, dice the cucumber, wash the spinach, and slice the red onion into rings. Rinse the chickpeas.
    4. Build your bowl: Spread the quinoa as a base in a wide bowl. Arrange the vegetables, chickpeas, and avocado slices around it. Spoon the dressing over the top and sprinkle with pumpkin seeds.
